PROST! started as a bit of an experiment — and a challenge.
Christoph Hoch realised that his vineyards in Kremstal sit on very chalky soils, similar to those found in Champagne. Curious about what that might mean for sparkling wine, he travelled to Champagne to learn from producers there, including the Tarlant family.
During this time, Benoît Tarlant made him a bet that it would be almost impossible for Christoph to make a stable pét-nat back home in Austria.
The stakes? If Christoph could pull it off, Tarlant would give him twelve barrels.
Christoph went back to Austria, made his first version of PROST!, and sent twelve bottles to Champagne for judgement. After tasting them, Tarlant admitted defeat — Christoph had done it.So Christoph drove to Champagne and picked up his prize: twelve barrels.
