OYSTERS — PROST!

WHITE FISH — RIZZLING
Rizzling, our organic Austrian Riesling, is made for white fish. The crisp acidity and mineral finish clean the palate between bites and the citrus character brings out the best in delicate fish. Particularly good with battered fish, grilled sea bass, and anything with lemon.
PRAWNS AND SHELLFISH — THE GROOVER
The Groover's crisp, clean character and white pepper finish make it brilliant with prawns and shellfish. The slightly higher body than Rizzling means it stands up to richer shellfish preparations — prawn cocktail, crab linguine, lobster.
SALMON — ARRIBA OR LEFT ON RED
Salmon is one of the few fish that works with both white and light red wine. Arriba, our sparkling orange wine, is an extraordinary pairing — the tannins and texture mirror the richness of salmon. Left on Red slightly chilled also works beautifully with salmon, particularly in a Thai or Asian preparation.
SUSHI AND SASHIMI — RIZZLING
